One bite of these John's Island tomatoes...and you WILL be in love with them. In a traditional tomato sandwich, there is no recipe besides bread, mayo and tomatoes. Duke's mayonnaise is the the way to go. I decided to take the road less traveled and put a spin on this classic sandwich, and added soft goat cheese instead of mayo. I call this bad boy "The Goat". I use Olinda olive oil before toasting the bread, which seeps into the nooks and crannies, depending on your bread. I use a rustic whole wheat sourdough. Below, you will see my recipe-less recipe.
Bread- your choice
Olive oil- http://olindacharlestonblend.com of course
Spread- your choice. Goat cheese with honey is yummy!
Tomato- use the best ones that you can find.
Salt and pepper- to taste
Get your bread. Brush it with olive oil. Toast it up nice, whether in an oven, a toaster oven or pan.
Spread goat cheese on it while the bread is warm. This is key!
Slice your tomato as you please, but slice it nice. I prefer layered thin slices, as I use thick bread.
Season with salt and pepper to taste. Eat it over the kitchen sink.
