prosciutto wrapped peaches with lemon zest
South Carolina has some dreamy peaches, let me tell ya! They are so flavorful, you could serve them on a toothpick and your guests would be amazed. It IS nice to get snazzy, and wrapping sweet southern peaches with pieces of prosciutto di Parma is a nearly effortless way to do so. Thoughtful and elegant, these peaches are sure to please. Dazzle with a drizzle of Olinda olive oil to finish it all off.
Serves 4-6
3-4 good peaches, washed, pitted and cut into 4-6 slices each
6-8 thin slices of prosciutto or prosciutto di Parma (if you can find it), each slice cut into 3 long ribbons
A light drizzle of olive oil
A pinch of Kosher salt or flaky sea salt, to taste
Zest of one lemon
A few basil leaves, for serving
Wrap each peach slice with a strip of prosciutto. Plate beautifully on a platter. Drizzle the prosciutto wrapped peaches with olive oil, salt and lemon zest. Serve on platter immediately, and feel free to decorate the platter with basil leaves, or even put basil leaves in the bundles!
