Sheet pan granola with olive oil and honey

Homemade granola is an approachable, mess-free and fun recipe to make. There are many varieties of granola available to buy at grocery stores, but homemade granola is a real treat.

2 ½ cups rolled oats ¼ cup maple or date syrup ¼ cup honey ¾ teaspoon vanilla extract ½ cup olive oil, I prefer Olinda olive oil A pinch of ground cinnamon 1 ½ teaspoons kosher salt ½-1 cup sliced almonds 1 cup dried fruit (dried cherries, raisins, golden raisins, dried cranberries work well), optional Preheat the oven to 350 degrees F. Line a rimmed baking sheet with a piece of parchment paper and set aside. Add the rolled oats to a large bowl. In a small bowl, mix the syrup, honey, vanilla olive oil and cinnamon. Add the mixture to the large bowl or rolled oats and add salt. Toss well to coat evenly. Spread the mixture on the prepared baking sheet and bake for 30 minutes. Stirring halfway through. Remove the tray from the oven and stir in the almonds and dried fruit, if using. Bake for an additional 30 minutes, once again stirring halfway through to brown evenly. Cool completely on the tray, in order for the honey and syrup to set and create a crunchy granola full of clusters. Store in an airtight container for up to 2 weeks.
