Feta cheese is a salty, tangy and briny cheese. Whipped feta is creamy, slightly sweet and luscious. Olinda olive oil and Apis Mercantile honey help create a well-balanced dip that will keep you coming back for just one more bite. Whipped feta can be enjoyed with fresh vegetables, warm pita breads, on a spoon or even on a flatbread.
1 pound feta cheese, cut into 2 pieces, at room temperature
1/4 pound cream cheese, softened
2 tablespoons heavy cream
1/4 cup extra-virgin olive oil, plus more for drizzling
1 tablespoon fresh lemon juice
1 tablespoon of honey, plus more for drizzling
Zest of one lemon
Freshly cracked black pepper
Radishes, to garnish, optional
Cucumbers, to garnish, optional
Fresh vegetables, to accompany the feta, optional
Toasted pita bread triangles, to accompany the feta, optional
In a large bowl, cover the feta with water and let stand at room temperature for 30 minutes to temper the saltiness. This is a very important step, or else the feta will be overwhelmingly salty. Drain and coarsely crumble the feta. Transfer to a food processor and puree. Add the cream cheese, heavy cream, 2 tablespoons of the olive oil, lemon juice, honey, and freshly cracked black pepper to taste and process until smooth as can be. Refrigerate for 1 hour to let the flavors develop. Garnish with sliced radishes and diced cucumber, and perhaps a drizzle of olive oil and honey. Serve with vegetables and pita, if you wish.
